Tijuana.- Disneyland Resort announced the new restaurants that will open in the coming weeks, three new gastronomic experiences, ‘Paseo’, ‘Céntrico’ and ‘Tiendita’, which will bring authentic Mexican food from award-winning chef Carlos Gaytán to the district. with a Michelin star.
Menu highlights include items like colorful ceviches and lamb barbacoa at ‘Paseo,’ the quesabirrias and tlayuda at Céntrico, and street staples like esquites, chorizo breakfast burritos, and more at Tiendita.
Din Tai Fung, a Michelin-awarded restaurant brand from Taiwan, will open this summer in the district, serving favorites like their signature soup dumplings (Xiao Long Bao), wontons, noodles and more.
Two new restaurant concepts: a steakhouse and an adjacent barbecue restaurant are underway and will be in the space of the former Tortilla Jo location.
Work will soon begin to expand and reinvent Marceline’s Confectionery, and during this transformation, visitors will be able to continue enjoying sweet treats from the Marceline’s cart that will soon be available in the district.
Chef Gaytán’s connection to his homeland comes to life when he combines his love of Mexico with French culinary style and technique. Featured menu items at Paseo will include colorful ceviches, mama’s cochinita pibil (roasted marinated pork), lamb barbacoa, and the mejillones (mussels) pictured above.
Céntrico, the patio bar and restaurant, will be a central and energetic gathering place serving upscale Mexican cuisine and tequila-based cocktails. Its open, airy spaces designed with custom wood elements and lush greenery will welcome you to its outdoor canopy.
Céntrico’s featured dishes will include quesabirrias, chicken enchiladas, tlayuda (a Oaxacan sharing dish reminiscent of a pizza with a perfect crunch), and one of Chef Gaytán’s favorites, the Caesar salad.
At Tiendita, he will experience flavors of Mexican heritage and street food while he travels. Through a self-service kiosk, menu options will include esquites (roasted corn), fish tacos, ice cream-filled chocolate tacos and breakfast favorites like chorizo burritos and chilaquiles (egg-marinated tortillas).
Recently, Chef Gaytán led a cooking demonstration at the Disney California Adventure Food & Wine Festival, giving festival-goers their first look at his tetelas, which are corn dough-filled triangles that will be on Paseo’s menu. . The Disney California Adventure Food & Wine Festival runs through April 22, 2024.
Additionally, two new restaurant concepts are in the works for the Downtown Disney district: a steakhouse and an adjacent barbecue restaurant. These will be located in the footprint of the former Tortilla Jo’s.
