Hispanic chefs make sugar monument inspired by COCO

Nubia Rentería and Jorge Sotelo bring to life a candy sculpture that illuminates the lobby of Disney’s Grand Californian Hotel & Spa, and they also prepare cookies for the Halloween season, until November 4.

Tijuana.- Important work and creativity is carried out by pastry chefs Nubia Rentería and Jorge Sotelo at Disneyland Resort, who gave life to a sculpture inspired by COCO, with the main ingredient being ‘sugar’. The beautiful sculpture will be on view at Disney’s Grand Californian Hotel & Spa, in the lobby, until October 31, so if you stop by the theme park, be sure to see this work of art and take a photo.

For the Halloween Time and Day of the Dead season, Hispanic chef Jorge Sotelo talked about what it was like to make this work of art: “This work took us a month to do, the most difficult thing was understanding everything that the people at Imagineering Pixar wanted, using the images that they sent us of how exactly they requested it, that was the most laborious. We were blessed because we have a very talented work team of around 10 people, pastry chefs, carpenters and in addition to the dishwashers, those who bring the product and more, and Nubia, who is always by my side.”

“There are about 10 different colors that were used, starting with yellow and increasing the tone until reaching the color of marigold. Among the ingredients are fondant, rice and chocolate, among others,” commented Nuria.

And if this were not enough, the pastry chefs sell delicious desserts in a beautiful cart decorated for the occasion: “We have a bread that we make with a Mexican recipe, we use 100% Mexican ingredients, and a delicious chocolate bread came out.” Sotelo added. And Rentería added, “I love skulls for the Day of the Dead, and we made a very delicious skull cookie, and we decorated everything with figures alluding to the occasion.”

Although they use sweets a lot in their gastronomic creations, both chefs are aware that they should not exaggerate it, so that people can taste it, because what they want is for them to return for more of that favorite sweet that is only offered in grocery stores. Disneyland Resort.

Among the products they offer are skull cookies, gingerbread men, butter and sugar cookies, walnut cookies, mango and hibiscus macaroons, horchata cookies filled with dulce de leche, churro rice crispy, and chocolate-wrapped pretzels. and chocolate walnut cookies, all properly wrapped to give as a gift or simply take home.

The above delights can be found in the Lobby of Disney’s Grand Californian Hotel & Spa from Monday to Thursday from 3:00 in the afternoon until 10:00 at night. And on weekends from Friday to Sunday from 12:00 noon until 10:00 p.m. “We invite you to come and consume these delicacies that we will have until November 4, 2023, and don’t miss the sculpture of Coco too,” concluded Nubia and Jorge, who kindly gave us some delicious cookies made with Hispanic love.

This Halloween, Disneyland Resort clearly isn’t short on anything that doesn’t cater to guests’ whims. The food adventures are truly endless at the Disney Parks.
